Star, giraffe, treestump, spiral by Tom as well as broken egg and horn by Noddles
A few days ago Tom decided to have a go at some pancakes after I pointed him to the blog Jim's Pancakes.
All of these pancakes are made with a combination of plain batter and one coloured with chocolate milkshake powder !
I think he did pretty well for a first attempt!

Pancake Day
So we had pancakes tonight. Traditionally you eat pancakes with sugar and lemon juice but we had savoury ones.. Noodles and Treestump had cheese and I had cheese and tomato, actually cheddar, feta and tomato.
I always find it hard to explain how to make pancakes as I make them by eye and never measure anything so I will give you the amounts Delia Smith suggests for standard gluten pancakes. I would expect gluten free flour to use slightly less flour to liquid as it tends to soak up more but of course your specific mix will vary a bit. We normally use Dove Farm's plain white flour though a mix of that and buckwheat works well to, buckwheat being another very traditional type of pancake though more on parts of the continent than here.
So Delia says
110g/4oz plain flour, sifted (replace with GF flour)
pinch of salt
2 eggs
200ml/7fl oz milk mixed with 75ml/3fl oz water
I don't add anything like Xanth gum or other binders it really isn't needed. You are looking for a batter that is like thin cream, still very liquid but with just a bit of body.
Heat your frying pan or griddle and use just a little butter or oil to lubricate it, very little is needed and too much results in a fried pancake not what you are after.. you just want to stop it sticking.
Pour a small amount of batter into the pan and swirl around you are aiming to cover the base of the pan with a thin layer.
This is what it should look like once it's started to set.
Wait till the top side is basically dry and shake the pan to loosen the pancake then either flip with a spatula or more traditionally flip it by flicking the pan upwards to make the pancake jump out the pan, flip over and catch it with the pan.. this can get very silly and end with lots of messed up pancakes :)
We normally serve them up as they cook so they are nice and hot but if you want to make a plate full put a layer of greaseproof paper between each one as you go or they will all stick together.

Weekly Menu 23rd to 27th Feb 2009
We got tempted by a very reasonably priced waffle maker this last week and the boys love them so we came home with it. It was under £10 from Lidl so worth a go and the picture above is the result fo trying one of the recipes that came with it all be it with GF flour. These are honey sweetened ones Very nice indeed. I've never had them before as they weren't common here when I last ate gluten. We have since tried the cheese waffles which were great too though did stick to the waffle make a bit more.
Anyway on to this week.
The Gluten free menu swap this week is to be hosted by Asparagus Thin who has chosen Umami as our ingredient. I hadn't even heard of this so off I toddle to wikipedia who tells me that it is is one of the five basic tastes sensed by specialized receptor cells present on the human tongue. It's from Japanese meaning roughly "delicious flavor", although "brothy", "meaty", or "savory" So I guess we will probably be having that a few times this week. I will await er blog entry to find out if I right with interest!
I am still trying to eat up the rest of the food from the bigger freezer so we can defrost it. I've moved the icecream and some other bits to the smaller freezer and there is still some room so we are nearly there I think.
Monday - Pasta with meat sauce, probably beef mince, tomatoes etc with maybe a bit of liver depending what it looks like when defrosted properly.
Tuesday - Something made with puff pastry for the gluten eaters and the pizza base mix from a few daring baker challenges back for me as I have some of each in the freezer.. probably some sort of turn over type things, cheese, cheese and chicken, mushroom depending on what people want.
Wednesday - eat up day of anything that doesn't fit in the smaller freezer.. so probably burgers, pizza, random potato based things and so on..
Thursday - Something veg based as by then we will have had far too much meat.. probably a veg stir fry or curry.
Friday - omelets or tomatoes and eggs.

Weekly menu 19th to 23rd Jan 2009
This weeks host is Book of Yum one of my favourite blogs and she has picked lentils as the ingredient of the week which is great because I was thinking I should be cooking with them more. Go and visit her blog for some interesting lentil facts and a list of the other gluten free menus this week, many of which sound fantastic.
Monday - turkey stir fry
Tuesday - dry veg curry with a dal of some sort.
Wensday - Stilton and cauliflower soup
Thursday - fish - possibly fish pie ie topped with potato depending on what is in the veg box
Friday - lamb chops with pue lentils

Weekly Menu 12th - 16th Jan 2009
This week's gluten free menu host is Fresh Ginger and they have chosen locally grown as the ingredient. Our veg box each week comes from the local organic shop and as much of it as he can manage is locally grown. This year one of our main objectives is to get our allotment up and running so we have our own veg at least part of the time.
Menu this week
monday - meatballs, oven roast veg and cabbage with saltanas
tuesday - bean stew
Wensday - pork chops, potatoes and leeks.
Thursday - omelets
Friday - out in the evening.

Weekly Menu 5th - 9th Jan 2009
First menu of a new year as the last few days have been eating up whatever is in the fridge, however school and work start tomorrow so time to get organised. This week will be a late shift week for Himself so quick to prepare or things I can do with a small under foot or prep in advance are the order of the day.
This weeks gluten free host is Gluten Free Goodness and she has chosen soup for the ingredient of the week something that will be no hardship here.
We have a lot of cauliflower and indeed other vegs knocking about so I think they will figure heavily particularly as after the holidays I feel the need for more vegs but in a warm winter sort of a way. I also got a new cooking book for christmas - cook your own veg, partly I think I was given in it the hope that we should be getting the allotment up and running this year.
Monday - Cauliflower with garlic and orange sauce (from above book) with potatoes and either chicken breasts or lamb chops...
Tuesday - chicken noodle soup as described in the use real butter blog. It is fabulous and easy to do as it's mostly just let chicken simmer in soy sauce and other things for a couple of hours to get the most amazing stock. !
Wednesday - Sausages and mash, served with cabbage of some type.
Thursday - Roasted white fish and leeks from the Jamie at home book, served with carrots and probably rice.
Might also try the winter coleslaw from James book as it sounds good for lunches.
Friday - some sort of veg soup depending what is left but probably some variant on cauliflower and potato or leek and potato with cheese scones.
Baking - We are running out of baked products and would prefer not to buy gluten free stuff it in as it is expensive. I certainly need more bread. Would also like to try these tortillas as mentioned recently on the gluten free yahoo group. Cheese scones and possibly some biscuits (cookies for those of you over the pond) if I can get myself sorted to do cooking early when himself is in.

Weekly Menu 15th - 19th Dec 2008
Ark sorry late this week, still got various ill people at home it just seems to cycle round who it is. Nothing serious but poor old Noodles is missing his Christmas concert today, he is currently singing the songs for it behind me.
Monday - chips from the chipshop
Tuesday - pasta and sauce based on a fresh salsa we have that needs eating and should make a good sauce base !
Wednesday - beef stew
Thursday - rice and stuff
Friday - Most of the day will probably be taken with making this month's Daring Baker challenge to take to the grandparents for the weekend so we will be having snack food that can be eaten in the car on the way down to them after school and nursery.

menu 8th - 12th Dec 2008 - what we actually had

Well this week went rather differently than I planned but in some ways better so I thought I'd post it up.
Monday - Soup and cheese scones. Scones were home made the soup bought in from the local farmers market, his whole range is gluten free and we had a very nice leek, potato and cheddar cheese one with a little crispy bacon to top it off.
Noodles had some scones as lunch the next day. He likes the Dairy lee stacker packs so I made him a home made version with mini scones sliced in half, some slices of ham and baby tomatoes which seemed to go down well.
Tuesday - ended up picking up some discounted fish and turkey so we had pollock on sliced boiled potatoes with a king prawn, pepper, kale and cream sauce, which was very nice. Plus a cooked chicken for lunches.
Wensday - Mediterranean meatloaf following a recipe posted on the gluten free recipes yahoo group which Carrie from Ginger Lemon Girl runs.. It's an extremely nice turkey based meatloaf with sundried tomatoes and a spinach and feta filling.. still enough for another meal too. Definetly a keeper recipe. Served with boiled potatoes, mashed swede and cabbage.
Thursday - chicken (remains of cooked chicken from Tuesday) and bacon Frittata using some cooked potatoes from Wensday, some extra peppers and tomatoes plus obviously a bunch of eggs and a little milk.
Friday - Pizza.. Mine topped with spinach, feta and bacon.. lovely !

Burmese Curry
Sorry about the funny colours it was late at night and I didn't have the time or brain power to get a better pic.Originally from some bumper book of asian recipes a housemate owned years ago.
This uses huge amounts of ginger and garlic but the flavour while strong is much more mellow that you might expect because of the cooking time.
4lb meat - have used pork and beef at different times. While this will make basic meat taste good using really good meat is worth it as you do taste the difference though you can use a cut that needs slow cooking which keeps the price reasonable.
2 large or 4 medium onions, chopped
20 cloves of garlic
1 cup peeled, chopped fresh ginger
2 tsp salt
2 tbsp vinegar
1-2 tsp chilli powder
3/4 cup peanut or basic oil
1/4 cup sesame oil
1tsp turmeric powder
Cut the meat into 1 inch cubes. Put onions, garlic, ginger into a blender and blend well. Put in a strainer over a bowl and push with the back of a spoon to get as much liquid out as possible. Pour the liquid into a big pan, add meat, salt, vinegar, chilli powder and half the basic oil. Bring to boil then cover and simmer over a low heat for an hour or so till meat is tender.
Meanwhile in a heavy based pan heat the remaining basic oil and sesame oil. When really hot add the mush left in the strainer from earlier, add turmeric, stir and cook over a low heat, covered, stirring regularly. Cook till smell has mellowed and onions are transparent. you want all the water content to evaporate and the paste to turn red-brown with oil showing round the edges which takes about 25 mins. Add a bit of water if needed to stop it sticking. Halfway through spoon some oil from the meat pan into the paste.
When both are cooked combine and keep cooking till there is no liquid and the oil separates out again.Serve with rice and vegs.

Menu 1st - 5th Dec 2008

We have had rather a run of people being ill with colds and sickness bugs and now I'm feeling worse for wear but I'm not sure if it's a bug or something I ate, dehydration or something... we had a great weekend at my aunts 60th birthday celebrations but for all her and the hotels efforts I'm not sure I didn't eat something I shouldn't have. On the way home I developed a huge headache which got so bad I ended up throwing up and I still feel heady with a rough stomach today.
That being the case and the fact himself is on late shifts today the menu is going to be quick and easy dishes we can cook without thought.
This weeks host for the gluten free menu swap is Heart of Cooking and they chose persimmons as the ingredient of the week. I've never tried them so if I am feeling up to it and can find one I may try them later in the week. Either way check out her blog to see what everyone else is cooking and to see her very intriguing upside down cake.
Monday - Burgers and chips and salad
Tuesday - pasta with tomato and veggy sauce
Wensday - Baked potato with various toppings including tuna and sweetcorn and cheese
Thursday - rice and stuff (ie rice with various added bits, vegs, meat etc)
Friday - Cauliflower cheese
I thought I'd explain a bit about our cauliflower cheese as we often have it on the menu and I know for some people it s a side dish. Thing is we add a lot more to it than just cauliflower and cheese so it really is a complete meal.
The picture at the top of this post is the final dish.
This picture is of the three main stages. Cauliflower and broccoli which we steam or boil till just soft. various vegs and bits fried off including this time leek, peppers and some left over gammon though we don't always add meat.
Finally a cheese sauce made from GF flour, butter, milk, a little mustard powder and grated cheese. I can't give amounts as we just make it by eye but as long as it is thicker than milk ad still thin enough to pour pretty much any consistancy of sauce works.
The vegs are all mixed together in a dish deep enough for a layer of cauliflower florets to sit well. Then they are covered with the cheese sauce and more grated cheese and baked in an oven at 200C for about 30 mins..

Weekly menu 24th - 29th Nov
Well best laid plans and all that, what with himself doing late shifts and everyone being under the weather with colds I didn't get round to most dishes though I did manage the Burmese curry (recipe to come later) , gammon and surprisingly did all the baking I planned.
However this week is partly a repeat of the recipes I didn't do last week. This weeks ingredient is sweet potato which I love bit mostly just have roasted and in stews so i will be interested to see what others do.
Monday - Pasta and sauce.
Tuesday - Shepard's pie with mixed root veg topping
Wednesday - kedgeree (rice, kippers, eggs, peas and spices plus anything else I fancy throwing in)
Thursday - Cauliflower and broccoli cheese.
Friday - Lamb and chickpea rice pot
The gluten free menu swap this week is hosted by Book of Yum so please visit there for more ideas.

Weekly Menu - 3th Nov - 8th Nov.

We had home made fish and chips for tea on Sunday which was very nice (picture above). Plaice this time as it was on half price at ASDA. It was lovely fish but I'm not very keen on ASDA'a fish counter the selection wasn't that big and unlike Morrisons they don't tell you where and how it was fished something I really appreciate but that was where we ended up partly to have breakfast in the cafe as they serve quicker then Morrisons.
Had a great Halloween party and Noodles and I had great fun cooking silly food.
This week we have started with no heating so I hope things can only go up from here.. for a day we had all the zones of underfloor heating downstairs working but then the pressure dropped and we ended up with none rather than one zone not working as we had before. ho hum. We think it's just a joint leaking but as we had to wait for the ages for the plumbers to finally come on Friday as we couldn't get it to seal and now it seems they haven't either I'm not sure when it will be fixed..
Anyway onto the menu
Monday - bar-b-q spare ribs with rice
Tuesday - pot roast beef and vegs.
Wednesday - vegetable pasta bake.
Thursday - Burmese curry (will need to get lots of ginger and garlic for this)
Friday - Hoping to try making some pies, probably chicken.
Somewhat heavier on the meat than I normally aim for but it's that time of year where heavier meals seem like a good idea particularly when we might not have heating!

Weekly menu 27th - 31st Oct
This week is half term so Small is home. (or as he is from now on to be called Noodles on account of him being too big to be Small now.. Why noodles is a long story with no noodles involve but is much more to do with me being unable to use someone's given name without adjusting it !)
The one thing he has requested we do is cooking so I'm doing something right. We will be cooking Tuesday and Friday as those are the two days his baby brother is at nursery. Friday will be Halloween monster cakes and the like as he wants a Halloween party.
Treestump is eating us out of house and home. He will eat pretty much everything even though he only has the first courner of his first tooth through so far! For instance yesterday lunch time he had potato, broccoli and peas mashed together with a little red wine gravy and carrots and roast Parsnip as finger foods. He then took not one but two small yorkshire puds out of his dad's hands as he was trying to eat them and ate them followed by apple and custard before polishing off a sponge finger and stealing his gran's raspberries !
Anyway onto the menu.
Monday - Tomato and eggs, that simple but wonderful regular on our menu.
Tuesday - Pizza
Wensday - (Noodles is out with his grandparents all day.) Thai chicken curry and rice (using coconut this weeks ingredient)
Thursday - Beef stew with wonderful beef from the grandparents which is sourced locally to them.
Friday - Halloween party so lots of party food with far to much food colours !

Menu 29th Sept - 3rd Oct
Theoretical will have a bit more time now as Treestump is at nursery 2 days a week. Of course I'm meant to be doing useful stuff and possibly even money making stuff though working on the house counts as they we don't have to pay someone else..
Anyway menu for the week. I'm not using the ingredient chosed by Kimberly at Living Free because it's almond which I tend to be wary of after a couple of bad reactions I can't tracy to anything else though it doens't always heppen nut allergies are so serious I don't want to develop one. Also i want meals I can mince down for Treestump as he is very keen to eat solids and it's to soon for him to have nuts. Please check her blog for the list of other gluten free menus.
Monday - turkey stirfry with rice noodles
Tuesday - himself is out of the evening meal so we are having bought in Aberdeen angus meatballs and rice.. they look great!
Wensday - stuffed marrow and cauliflower cheese
Thursday - veg and bean stew or curry depending how we feel.
Friday - bangers and mash. (bangers are sausages for the none brits) or fish if I manage to get out and find something nice later in the week.
Baking - planning to retry the eclaire recipe from the August daring baker challenge and do the sept one again using hazelnut flour will blog that in a moment.

Baby food
We have gradually been introducing Treestump to food for several weeks but this week he very much jumped from having some purée ever now and then to wanting to eat whenever anyone else does and also from just having purée to being able to cope with lumps and indeed eating things like rice crackers and biscuits unaided.
He had one day of trying to chew, getting food stuck and coughing so we would have to tap him on the back then going back to eating his rice cracker. This happened a few times over the course of the same rice cracker but he kept being adiment he wanted to eat it. After that he seems to have learnt how to chew or at least swallow once he has gummed something to pieces.
Just now he sat and eat a good chunk of banana , just straight as it comes and is now gumming to death a small biscuit. Not bad for just over six months.!
He is definitely following in his big brothers footsteps of preferring strong flavours too which I'm not going to complain about.. but then my favourite food at two was pickles, indeed anything in vinegar.
According to the Uk version of Gluten free for dummies, which is actually a very good book, the best time to introduce gluten to minimise the chances of them developing Celiac is six months so we are planning to start introducing it a little bit. As most f our meals aren't gluten based he isn't going to get as much as most kids would but the boys eat real bread and so forth so he will get some.
We wil see how it goes.

Weekly Menu 25th - 29th August
Rather late this week as Monday was a bank holiday so felt more like the weekend. Monday was in fact THE bank holiday the time everyone traditionally goes away though we didn't but only because what we had planned to do got cancelled. However this weekend did have something new and it was food related.
We have just got a new supermarket open near us, now I'm not totally keen on supermarkets when they drive out small shops and we try and get things like vegs and bread from local shops. However this isn't Tesco or Sainsburys or even Morrisons this is a Lidl which is a German company and the range of items is very different. From a gluten free perspective one of the great things about them is they do continental sausages, we came out with four different types and we didn't get any salami or that sort of sausage these were all suitable to replace a traditional banger with.. guess what we are having this week !
The gluten free menu swap is hosted by Fresh Ginger this week and she picked Eggplant or as we call them aubergine. I like aubergine but we don't often have them so I will check the Indian grocer later in the week and if they have them I will do a dish or two with them.
Monday - went to Habibi a local Arabic restaurant, we sat out the back on cushions in a tented area open to the fresh air and all of us including Small really enjoyed both the atmosphere and the food. If you check out the website you can see the menu and everything is made fresh. Most of the dishes are naturally gluten free and indeed we had the mezza for four and all the dishes were fine, apart from the bread on the side which was easy to ignore. Even Treestump (5 months old) had some humus off my finger and seemed to enjoy it.. it's a bit of a family tradition now to introduce them to humus early. Any place that apologises they can't do us a second strawberry milkshake for Small because they ran out of strawberries gets high marks from me as nearly everywhere uses milkshake syrup not fresh fruit. I had a limeade which was again freshly made and fantastic.
Tuesday - sausages in tomato sauce served with rice or pasta.
Wensday- gammon, eggs and new potatoes
Thursday - If I have time Involtini di Pasta e Polpette or moussaka or I might check this Aubergine recipe site a little more and pick something easier.
Friday - Some sort of veggy bake or soup depending what we have extra of veg wise.
I have also been given a bag full of cooking apples so some baking for the freezer seems on the cards.

Weekly Menu 14th - 18th July
This week is likely to be hectic with it being the last week of term and himself is off to an event this weekend so that means him packing all the group camping stuff etc.
I am hurriedly finishing pressies for Small's teacher and two teaching assistants as they have been wonderful and proved it is possible to teach well in a state school even one where half the kids start with no English and they still managed to keep a very intelligent, bouncy child interested and engaged all year while teaching others the most basic of communication.. I'm not quite sure how they do it but they are wonderful. Just a little brag.. we are going into the afternoon assembly as he is being awarded the Yearly Award for his class !!
This weeks gluten free swap is hosted by the founder Gluten Free Mommy and she has chosen peaches. I love peaches though I hold out for really ripe ones. I will be checking out our local greengrocers later in the week and if they have some in I will certainly get some, I'm tempted to do a peach crumble if I do but normally we just eat them fresh. ( Edit to add - Martha Stewart's cookie of the day is a peach one ! Will need converting but if I get some spare time this weekend I may try)
The picture at the top is the terrine from last week. It was very tasty but not everyone liked the layer of liver s next time I might chop the liver up and mix it in as it definetly added to the depth of flavour. The remaining slices were frozen and will probably got off to the camping event with himself.
As himself is working lates and then away from Thursday Small and I will probably have tea early and it will have to be quick and easy so some days may get replaced with salad which is his current favourite meal ! Salad for him means tomato, cucumber, carrots, ham, cheese (cottage or hard), majo, possibly sweetcorn and some fruit. I'm not objecting though!
Monday - Gammon, eggs and potatoes
Tuesday - Tomato and eggs
Wensday - Pasta and sauce
Thursday - some sort of chicken and rice
Friday -salad and baked potatoes

Weekly Menu 7th - 11th July
Where has the year gone? We are over halfway though Treestump is changing from a newborn to a baby who is frustrated his limbs will not do what he wants and getting upset when people eat in front of him to the extent I am going to start preping food for him to over the next few weeks so watch this space. His brother started on solids at four months and I think he is ready too.
however on to feeding the rest of us. This weeks menu swap is hosted by Cheryl over at Gluten free Goodness and she has picked raspberries as the weekly ingredient. No hardship there then. I will certinlay be munching though some this week as they are my favourite. I hope to take Small fruit picking in the coming weeks too particularly as school is finishing soon, though I need to practice driving the bigger cars before then as me and two children do not fit in a Smartcar however much I'd like them to!! Our raspberry canes are new this year so are only producing a few fruit however I look forward to later years when they and the various bushes get properly established.
This weeks rundown
Monday - Chicken with walnuts and apricots -a recipe in my recipe box I've never tried but liked enough to copy from somewhere at some point.
Tuesday - Beef Stirfry (eat early as I need to have bloodtests the next day which are one you have to fast for. Nothing serious just to check my iron and so forth as I'm rather rundown)
Wednesday - Pork and pastasio terrine (another untried recipe)
Thursday - Tuna pasta bake
Friday - Home made fish and chips. (for those not in the UK fish and chips is a national dish normally bought at a fish and chip shop but the fish is battered so off limits unless made at home.)

Weekly Menu 9th June to 13th June
This weeks ingredient is eggs another real staple here both for savoury dishes and in baking particularly if I make that Opera Cake again ! One of our staple quick lunches is poached eggs on toast or muffins if we have them, in fact I may well be tempted to do Eggs Benedict for breakfast this coming weekend as we haven't had it in ages.
One of our close friends is however allergic to them thought she can eat baked products such as cakes that have them for some reasons. She is the same one who can't eat tomatoes and she had her baby four weeks early by emergency c-section on Friday at the same time as her father in law's funeral!!. She should be out of hospital soon though the little one is still being monitored so i am hoping to get some baking done to take over when she gets out. Oh and the builders start replacing her kitchen on Wednesday, they had hoped to get it done before the little one was born!!
The Gluten Free Menu swap is being hosted by Asparagus Thin this week and she is doing a very nice sounding menu including a French day with Apple, Artichoke and lentil salad and Chestnut-Onion Tart with roasted root veggies. I was just thinking I fancy a Pue Lentil salad so that probably influences my view :)
Monday - Fish fingers, chips, sweetcorn and peas by special request of the Small.
Tuesday - Spinach and ricotta (or cream cheese) lasarna
Wednesday - Gammon, fried or poached eggs, new potatoes, pineapple and something green
Thursday - Tomato and eggs (a real staple dish one which we have regularly and I have written up properly below)
Friday - Salad platter with boiled eggs, cheese, carrot, cucumber, tomatoes, and any other raw vegs that look nice.
Tomato and Eggs
(I think this is originally from a weight watchers book but we have made it in my family for years as a real simple, filling meal)
serves 3
2 tins of chopped tomatoes
large onion
pepper (optional)
salt and pepper
6 eggs
some cheese
Need to cook in a deep sided frying pan preferably with a lid.
Finely chop the onion and peppers if using, fry off to soften then add tomatoes then cook gently till very thick. Once the sauce is thick break the eggs on top round the edges of the pan so they are evenly spaced. Put the lid on and cook till eggs solidify, then grate over cheese and cook just long enough to melt cheese. Serve 2 eggs per person.
This recipe is easy to extend to 4 or even 5 people by adding more eggs or serve one egg per person but serve with extra veg,
